Cooking from the orchard, the way the building always did

A restaurant in the old retort room, a bar papered with vintage can labels, and a preserving kitchen that still fills jars every harvest.

The room where sealed cans were cooked under steam pressure, now an open kitchen with a wood-fired hearth, a long counter and tables set between the old iron vessels.

The menu follows what the growers on Lakeshore Road and Niagara Stone Road bring to the back door: asparagus and morels in May, stone fruit and tomatoes through August, squash and venison when the vines are bare. Six courses cost CAD 115, or CAD 185 with wines chosen from within twenty kilometres.

The Label Room

Where the printed labels were once glued onto tins, a bar lined with the original lithographed labels we found in the attic — peaches, pears, cherries and one mysterious brand of pickled beets.

Forty wines by the glass, all from the peninsula, including a flight of three icewines and a Cabernet Franc list we are quietly proud of. Small plates until 22:00.

The Pantry

What goes into the jars

Our preserving kitchen puts up around nine thousand jars a year. Guests take one home; the rest end up on the breakfast table and in the shop by reception.

  • Peach butterRedhaven peaches from a farm two roads away, slow-cooked with a little vanilla.
  • Sour cherry preserveMontmorency cherries, picked in July, barely sweetened.
  • Heritage tomato passataThe same recipe the cannery ran in the 1920s, minus the tin.
  • Icewine jellyMade in January from the dregs of our favourite Vidal icewine.

When the kitchen is open

Guests of the hotel always have a table at breakfast. For dinner on Fridays and Saturdays, book when you book the loft.
